Persian blue salt is rich in calcium, iron and potassium and is one of the rarest and oldest salts on Earth.

This luxury salt is studded with sapphire-coloured rock crystals and is extracted from the Ergourz mountains in the Semnan province of Northern Iran. Only a few tonnes of the salt are extracted each year.

Its stunning blue color comes from sylvinite, a potassium mineral. The color is produced due to the way the pure, unpolluted salt crystals refract light, after forming under extreme pressure for more than 260 million year.

It has a mild aftertaste, which means it won’t overpower delicate flavours, and is great as a finishing salt to add color to a dish.
