（1）as you know, our freezer is using the liquid nitrogen as the freezing medium, the lowest temperature can reach at -190℃, but you can adjust the temperature as your need. our customers often set the temperature at -70℃~-90℃, so the cold gas nitrogen loop inside of this cabinet freezer, When it is in contact with food, gasification will be able to take heat away more quickly.The ultra-low temperature and high heat exchange rate achieve a really quick Frozen, 

so when you use our freezer to frozen the miscellaneous fruits, the freezing time is about 5 minutes-10 minutes to let core temperature reach at -18℃ or -20℃

Such fast freezing,generating the smallest ice crystals, and helps maintain food texture.This also prevents water loss, and almost no loss:to maintain the original color,flavor and original quality of the food.

(2) using traditional freezer, the dry weight loss is about  5 ~ 10%, but liquid nitrogen frozen is almost no dry weight loss,  just 0.25 ~ 0.5%.
