Red to mahogany product, produced from completely ripe, healthy undamaged washed strawberry.

2. SENSORY REQUIREMENTS:
Appearance: Red to mahogany, color changes allowed during storage, free from skins, stones and all foreign substances
Consistency/Structure: Uniform, pulpy without seeds
Aroma: Typical of its kind, pleasantly fruity, without any alien odor
Flavor: Typical of its kind, fruity, fresh with no alien taste

3. PHYSICAL AND CHEMICAL CHARACTERISTECS:
Solids (refractometer20° C): 5° -7° Brix
Acid: 0.4-1.3% w/w(as related to anhydrous citric acid at pH8.1)
pH value: 3.2-4.2
Viscosity: 220-600 mPas
Suspended pulp: 27-42% w/w
Particle diameter: < 0.68mm

4. MICROBIOLOGICAL CHARACTERISTICS:
Aerobic total count: ≤ 100cfu/g
Yeasts: ≤ 20cfu/g
Molds: ≤ 20cfu/g

5. PACKAGING:
Net Weight: 200Kg.
Packaging: In aseptic bag packaging, with plastic bag outer packing, put in metal drum

6. SHELF LIFE AND STORAGE:
Stored frozen (-18).
Shelf life at(-18)=24months
