At every seder is a plate that has a stack of three pieces of Matzah (unleavened bread) on it. There are several interpretations for why we use three matzot. One is that they represent the Kohen class (Jewish priests in ancient times), the Levites (who supported the Kohanim) and Israelites (the rest of us). Matzah that is used as different times during the seder. While most Matzah covers nowadays are four-sided as most matzot are square, some are round to accommodate the specially made shmura Matzah, which is specially handmade. Since the seder meal is a festive one, it is nice to have a Matzah cover that makes our table look special.

In recent years, many families added a fourth Matzah for the struggles of the Soviet Jewry.

Though those Jews now have much more freedom, many people still keep the fourth Matzah to help remember those people who are not yet free to celebrate as they wish.
