In freeze-drying, the coffee extract is frozen to about – 40®C and cut into granules. The frozen granules are then dried at low temperature and under vacuum. The quality of the aroma and flavour are protected by the very low temperature and gentle drying conditions.

In freeze-drying, brewed coffee is frozen into granules, which are then placed in vacuum chamber, where the water sublimates (evaporates w/o liquifaction).
In spray-drying, brewed coffee is sprayed in tower and dried by hot air in the matter of seconds. Freeze dried instant coffee has a higher quality and better preserved flavor.
